An incredible 8 hand collaboration of four trail blazing chefs will be held at Le Du and Potong this week. Chef Varun Totlani, MASQUE Head Chef, (Asia’s 50 Best Restaurants 2022 | Ranked No.21 and Number #1 Restaurant in India) and Chef Dej Kewkacha Kyo Bar, Chef Owner (operates over 50 F&B outlets under 7 leading brands including the flagship Kyo Roll En) will be in Bangkok for this collaboration.
This collaboration was sparked by Indian cuisine’s influence on Thai cuisine. Over the last four months, Chef “Ton” Thitid Tassanakajohn (LEDU and Nusara Chef Owner, Asia’s 50 Best 2022 | Ledu: Ranked No. 4 and Nusara: Ranked No. 10) Chef “Pam” Pichaya Soontornyanakij (Restaurant POTONG Chef Owner, World Best New Restaurant 2022 Condé Nast Traveler) and Aditi Dugar (Director & Founder of MASQUE) have been working closely together on the collaboration.
Indian culture has greatly influenced Thailand’s religion, ceremonies, language, literature, dance, and cuisine. Despite Thailand’s distinct cuisine, it has been influenced by both Indian and Chinese cuisines.
Chef Varun is bringing the innovative take from ingredient-driven Indian cuisine, as Chef Pam is working on Progressive Thai-Chinese cuisine. They came together to bring about one of the most crucial aspects of the old “foreign trade” to spice up the event. While Chef Ton and Chef Dej are pioneers of Modern Thai and Dessert cuisine respectively.
