An Odyssey of Taste at L'Arôme by the Sea

Once we heard the news that Chef Yannick Hollenstein formerly of White Shuffle had found a new home in Phuket we were delighted to be given the chance to visit. The destination restaurant located on the south western side of the coast did not disappoint and it’s great to see Chef Yannick has truly found his element, in Larome by the Sea.

L’Arôme by the Sea is Located at Kalim Bay just above Patong beach. There are two distinct areas designed elegantly in a minimalist style: the restaurant level that highlights contemporary French cuisine and a rooftop bar where you can enjoy a sunset cocktail.

Service team members extended exceptional service at the table with a clear understanding of what was being offered and served. Besides the cocktail we enjoyed on the roof, we ate some of the best oysters we have ever had and a trio of tantalising canapés.

Chef Yannick skill-fully blends avant-garde French cooking techniques with his Swiss Alpine background, along with touches of Phuket locality to achieve a tasting menu of outstanding quality and stunning presentation.

In the prestige tasting menu, five or seven mouth-watering courses are presented in sequential order, each carefully paired with a fine wine from their 200-strong collection of exclusively French labels. A standout dish for us was the ‘FOIE GRAS AU TORCHON’ with Phuket pineapple jam, French toast and an infusion of Chalong bay rum. Secondly would be the ‘CHIANG MAI STRAWBERRY COMPOSITION’ served with rhubarb, fromage de chèvre frai, Tahiti vanilla. Being British, this dish brought back memories of eating rhubarb crumble as a child!

Throughout the entire meal, attention to detail is evident, from the custom-made plates for each course to the beautifully plated food.

Phuket lobster and local pineapples are both highlighted, demonstrating the focus on local produce. The cheese trolley, adorned with cheese from Chiang Mai and Chef’s home country, Switzerland, was the final delight before dessert.

Overall, L’Arôme by the Sea is a perfect addition to the Phuket dining scene and we can see Chef Yannick and his team achieving great success in the years ahead.
