CHAR Restaurant at the Hotel Indigo Bangkok is inviting InterContinental Chiang Mai Pae Ping chefs Jamrian “La” Chumpoo and Denwers Rattan for a Lanna x Latin culinary collaboration with the restaurant’s own Mexican-native chef, Jaime “Jimmy” Rojas. The unique culinary experience is taking place over two days at CHAR, from March 16–17, 2023.
With over 30 years of experience in Northern traditional cooking techniques, Chef La is flying down to Bangkok with her executive chef, Chef Denwers, bringing with them fresh herbs and produce picked from the hotel’s onsite garden. Known for their authentic Lanna cuisine, the two chefs will pair their expertise with Chef Jimmy’s reimagined flavours for a memorable collaboration.
The Lanna specialities of the dinner include Nam Phrik Nhum and Nam Phirk Ong—chili dips with crispy pork crackling and Sai Oua sausages—Hang Lay or pork belly curry, and Aep Pla, which is marinated snakehead fish curry.
For the Latin dishes, some of the highlights include the Nam Phrik Ong-inspired Pâté with house-baked focaccia, Beef Cheek Khao Soi Corn Taco, and the braised pork Hang Lay soft flour taco.
The dinner finishes off with a choice of dessert: Kanom Thien, steamed sticky rice with coconut served with coconut panna cotta with caramelised bananas, or Chiang Mai strawberry crumble with yoghurt ice cream.
The “Lanna x Latin Chef’s Dinner” experience is priced at 2,600++ baht per sharing set for two persons or 4,900++ baht for a group of four. Advanced booking is required.
