The award-winning Chef-Owner Julien Royer's debut restaurant, Odette (2015), is housed in Singapore's renowned National Gallery. The three-Michelin-star modern French restaurant provides a continuously changing cuisine driven by Royer's lifelong appreciation for seasonality, terroir, and artisanal ingredients acquired from small-batch producers all over the world. The restaurant provides modern French cuisine with a frequently changing menu. Vincent Tan, Odette's award-winning head sommelier, and Royer collaborated on the wine list. The list features winemakers that value quality above variety. Similarly, the five carefully chosen champagne varietals, which are offered by the glass and served on a custom-made oak champagne trolley, are held in high regard. While Chef Royer’s technique is based on French culinary ideas, his years in Asia have influenced his work and a sense of place is instilled on each plate. Odette is named after Royer's grandmother, who had a major influence in his life and in the kitchen, and represents her conviction in delivering the basic joys of eating in the most considerate, inviting, and hospitable manner possible.
