Rum is definitely at the centrepiece of this menu. Expanding on what the concept of tropical can be, they use a variety of modern techniques such as fat washing, clarifying and using homemade tinctures to create interesting and complex flavours. We love ‘three dots and a splash’ a straight-up cocktail of coconut fat washed Diplomatico, pineapple shrub, chocolate liqueur and banana tincture 370B and the ‘bone thugs-n-harmony’ with bone marrow & caramelized pineapple washed Bacardi Carta Oro, Bacardi 8 Anos and angostura bitters 420B.
