When most people think of Genever they tend to think of gin first but as Philip Duff explains to us, Genever is related closer to whiskey than gin.

Philip is renowned for being the industry’s much-loved cocktail and spirits expert and presenter. He joined us ‘On the Back Bar’ recently to discuss his own brand of Genever, ‘Old Duff’.

He served as the Director of Education at Tales of the Cocktail and through his consultancy brand ‘Liquid Solutions’, created trade engagement programs such as the Bols Around The World and G’Vine Gin Connoisseur global bartending competitions.

After the successful launch of his Genever in America, he is now traveling the world to share his spirit with us.

Duff in Bangkok

After a decade of being away, Philip was back in Bangkok to show the Thai bar scene what Genever is and with a special launch party at the top cocktail bar Vesper, he served everyone some tasty Collins to keep them in the mood!

His recipe calls for a good slug of Genever 60ml (2 shots) Old Duff Genever, 30ml (1 shot) freshly squeezed lemon juice and 15ml (half a shot) rich sugar syrup (2 parts sugar dissolved in 1 part water).

He then throws this in a shaker with ice before straining into an ice-filled Collins (long drink) glass and topping with sparkling water. He finishes off the drink with a lemon slice garnish.

Equipment

  • Shaker
  • Jigger
  • Highball
  • Hawthorn Strainer

Ingredients
  

  • 60 ml Old Duff Genever
  • 30 ml Lemon Juice
  • 15 ml Rich Sugar Syrup 2:1
  • Top With Sparkling Water

Instructions
 

  • Add all the ingredients except for the sparkling water to one part of your cocktail shaker.
  • Add ice to the shaker and close it together with the lid or other piece.
  • Shake hard for up to 10 - 12 seconds.
  • Using your hawthorn strainer, pour your cocktail into a highball with ice inside.
  • top the glass with sparkling water and garnish with a lemon slice.
