When most people think of Genever they tend to think of gin first but as Philip Duff explains to us, Genever is related closer to whiskey than gin. Philip joined us ‘On the Back Bar’ recently to discuss his own brand of Genever, ‘Old Duff’.
Philip Duff is renowned for being the industry’s much-loved cocktail and spirits expert and presenter. He served as the Director of Education at Tales of the Cocktail and through his consultancy brand ‘Liquid Solutions’, created trade engagements programs such as the Bols Around The World and G’Vine Gin Connoisseur global bartending competitions. He successfully launched his own brand of Genever ‘Old Duff’ in America and is now traveling the world to share his spirit with us.
After a decade of being away, Philip was back in Bangkok to show the Thai bar scene what Genever is and with a special launch party at the top cocktail bar Vesper, he served everyone some tasty Collins to keep them in the mood!
His recipe calls for a good slug of Genever 60ml (2 shots) Old Duff Genever, 30ml (1 shot) freshly squeezed lemon juice and 15ml (half a shot) rich sugar syrup (2 parts sugar dissolved in 1 part water). He then throws this in a shaker with ice before straining into an ice-filled Collins (long drink) glass. topped with sparkling water he finishes off with a lemon slice garnish!

60ml (2 shots) Old Duff Genever
30ml (1 shot) freshly squeezed lemon juice
