The multi-award-winning single malt brand, Glenfiddich, presented the ‘TIME RE: IMAGINED Exclusive Dinner’ in Thailand to unveil its latest special collection, a masterful expression of time, exquisite craftsmanship, and enduring legacy – a truly unique statement of Glenfiddich.

Glenfiddich Single Malt 30-Year-Old, 40-Year-Old, and 50-Year-Old are part of the TIME RE: IMAGINED Collection. Each expression has been aged for decades to produce a robust and sensually deep single malt. Made with Mastery, Refined by Time. Since the 1960s, a total of three ‘Malt Masters’ have been at the helm, overseeing the maturation of these rare and precious casks. Several decades later, these single malts have reached the zenith of their maturity and are now ready for release.

For the Thailand launch, Glenfiddich TIME RE:IMAGINED collaborated with Natthapol “Nick” Pavapaiboon, executive chef and co-founder of Wang Hinghoi, to create an exclusive dinner menu inspired by the stories, the tastes and the craftsmanship of each generation of Glenfiddich’s single malt making traditions.

As Glenfiddich 30-Year-Old: Suspended Time is an exquisitely structured balance of hearty oak married with sweet, subtle sherry notes. It also has deep, woody flavours interlaced with delicate floral accents and is warm, honeyed and exceptionally long-lasting which comes from 3 decades of maturation. The whisky was served with ‘Slow Aging Tajima Beef’, where 30-month grain-fed Tajima beef from Japan is seasoned and aged with various herbs to create a long-lasting taste that compliments that of the whisky.

Glenfiddich 40-Year-Old: Cumulative Time represents remnant vatting, an artisanal process whereby the remnants of a previous batch are carried over and married with casks for each subsequent release. Unlike other distilleries, Glenfiddich uses remnant vatting. This accumulates its flavours over time to create complex tastes of deep dried fruit or rich fruitcake, dates, raisins and stewed apples. These flavours are followed by dry oaky notes with subtle hints of bitter chocolate and peat. This exquisite liquid was paired with the second course, ‘Duck Confit Lasagna’. This spicy Thai-Italian lasagna assimilated the delicate, flavourful tastes of layered Glenfiddich. Garnishes, raisins coated in dark chocolate and other dried fruits were also used to add sweet nuances to the spiciness. Having aged for five decades, the Glenfiddich 50-Year-Old is extremely deep and complex. With rich orange peel and clementine notes combined with Madeira cake and muscovado sugar, this whiskey is truly unique. This rare and limited whisky was turned into a cocktail and was paired with ‘The Golden’, a Lod Chong dessert with Thai melon. In this recipe, the Lod Chong was infused with saffron from India to yield the perfumed scent and elegant golden hue that characterises Glenfiddich.
