If you love salmon, make sure to head to Greyhound Café and Another Hound Café soon as the restaurant group is offering a special “Norwegian Salmon Lover Menu” until May 6, 2023. Recognising the surge in demand for salmon among diners in Thailand, Greyhound Café has collaborated with Norwegian Seafood Council (NSC) to bring eight new dishes showcasing Norway’s finest salmon to the highly popular Thai restaurant chain. The Norwegian Salmon Lover Menu is a marriage of Nordic ingredients and Asian cuisine styles.
Starting off with an aromatic salad, the Thai Salmon Salad features Norwegian salmon with fresh cherry tomatoes, crisp salad greens, lemongrass, savoury shallots, mint leaves, and crunchy roasted almonds. The dish is drizzled with two different dressings, Japanese sesame and spicy Thai, for extra flavour. For another salmon salad option, the Supreme Spicy Salmon Salad highlights refreshing pomelo, fresh lime, cherry tomatoes, and chili with the salmon for a kick to your taste buds.
For appetisers, the Salmon Moza is a play on samosas, stuffing fried pastry parcels with premium Norwegian salmon, mashed potatoes, edamame, and plenty of spices. The dish is served with a zesty Thai cucumber relish. There’s also a reinterpretation of the Thai Miang Kham on this salmon menu, called the Salmon Kham. Dices of Norwegian salmon are fried for pairing with wild betel leaves and other ingredients, including a sweet and savoury sauce.
For main courses, find three Thai styled dishes and one Japanese fusion course. The Thai-inspired Norwegian salmon mains include the Grilled Salmon with Caramelised Fish Sauce, highlighting butterfly pea coconut rice, Thai papaya salad, and fresh vegetables; the Grilled Salmon with Thick Tom Yum, served with butterfly pea coconut rice, soup of the day, and chili fish sauce; and the Fried Salmon with Tamarind Sauce, with the soup of the day, jasmine rice, and fried duck egg. Meanwhile, the Fried Soba Salmon combines stir-fried soba noodles with grilled salmon glazed in a honey, garlic, and soy sauce mixture.
