I love fried chicken. It’s a weakness. Whether it’s a naughty late-night order of Bon Chon with a dollop of coleslaw or savouring Gai Yang alongside some sticky rice, fried chicken has become a staple in my diet.
But my experience at Birdies was a delightful revelation. The chef’s humorous remark, “We also serve chicken,” perfectly summed up my dining experience. Every detail, from the butter adorned with sustainable ash made from shallots to the option of adding Kaviari caviar to everything, showcased unapologetic indulgence.
Jennifer Evans, the mastermind behind Birdies, draws inspiration from her culinary experience across various kitchens worldwide, including stints in Australia, and the US, and a victorious appearance on a popular cooking show, ‘My Kitchen Rules’, in 2012.
Birdies is a restaurant beyond the wing. It’s not even a fusion but more an amalgamation of Jennifer’s culinary hits. In my opinion, she’s in the right place, she’s picked out the highs that work and turned them into a very accessible menu.
Taking the small bites menu at face value, you have options such as anchovies on toast or cabbage to choose from. Nonetheless, that cabbage is the best you’ve ever had. The combination of vegemite and tahini may seem strange, but it was satisfying enough that I took some home.
However, It is the chicken wings that steal the show. 3 things to choose from here. ‘Cut’, ‘flavour’, ‘sauce’. In addition to some wings and a juicy leg, I had a chance to try all the sauces, with my favourite being the ‘toum’ and ‘Alabama white’.
The chicken is nothing short but ‘banging‘. With crispy skin and juicy meat, they have clearly sourced their products well.
Of course, no meal would be incomplete without something sweet and the decadent sticky toffee pudding was a pretty epic way to finish. Very classic food but it’s how she has elevated these classics and made them ‘Birdies’ that makes this space special.
In addition to a new Sommelier – Restaurant Manager joining the team, to push the Champagne bubbles from their impressive selection, It’s shaping up to be an excellent spot for those who desire elevated food but want to escape the hordes at Emporium.
I would have only one criticism: get more Birdies out there. More locations, have it on the delivery apps and to be honest it would probably be on my weekly ordering list. At least twice a week.
