Chef Pat-In “Knock” Promsawadi, formerly with Taahra takes another step into gastronomy with Restaurant INT. The fine dining concept beckons with an intriguing name that invites patrons to embark on a culinary journey of their own making—a dining experience that unfolds like an open-ended novel, where each visit can be tailored to personal preferences, much like interpreting “international” or “interest” in myriad ways.

At its heart, this establishment weaves a captivating tale of French culinary expertise, skillfully interwoven with the vibrant tapestry of Thai flavors, a cuisine that defies the constraints of definition. For the chef, cooking transcends mere sustenance; it becomes a story, an art form brought to life through food. Here, diners aren’t just guests; they are participants in a narrative where knowledge and understanding are savored alongside each exquisite bite.

The chef’s culinary odyssey is one of perpetual growth and exploration, an unceasing quest for knowledge, an unending love affair with novel ingredients, avant-garde techniques, and innovative methods. And now, with the curtain rising on its debut menu, aptly named “Way Back Home,” Restaurant INT takes us on a nostalgic expedition, offering a passage back to cherished memories through the lens of the chef’s artistry. This menu marries the elegance of French culinary traditions with the unmistakable allure of Thai flavors.

Signature dishes such as the aromatic beef stew “Gao Lao En Nuea Tun” and the refreshing chilled milk bread “Pang Bing Nom Yen” serve as chapters in this epic tale—a fusion of technique and taste. Beyond the signature creations, the chef endeavors to breathe fresh life into everyday dishes, inviting diners to embark on a sensory adventure, where their own palates help shape the restaurant’s ever-evolving essence, contributing to an ongoing culinary masterpiece.
